A favorite of all Japanese kids ~ deep-fried chicken, Japanese style. A great lunch idea since they are delicious hot or cold. When making them for dinner, I always make extra for the next days lunch.
They are simple to make. Here are the ingredients for 4:
Chicken thighs or breast (about 4 - 5 cups of chicken peices)
1/2 cup Potato Starch
1/4 cup Plain Flour
2 - 3 cloves of Garlic
1 - 2 tbsp Fresh Ginger
1 cup Soy Sauce
2 - 3 tbsp Japanese Sake
1. Cut chicken into bite size pieces.
2. Slice garlic and ginger in thin slices. Add soy sauce and sake.
3. Add chicken to garlic/ginger mixture, toss to coat. Cover and chill for at least 30 minutes or overnight.
4. Mix potato starch and plain flour together. Leave until ready to cook.
5. When ready to cook, pour oil into a large pot to a depth of 2 inches. Heat the oil.
6. Dredge the chicken pieces entirely with the potato starch and flour mixture. Deep fry in regular vegetable oil. To add more flavor you can add a touch of sesame oil.
Fry until meat is well done and golden brown on both sides. Using a slotted spoon, transfer to a papertowel lined plate.
LUNCH TIP: Cool completely before adding it to your lunch box so the meat doesn't get soggy. Can be eaten with a slice of lemon or how my kids like it - dipped in mayonnaise or any preferred sauce.
